Closing Out February

February is a big month for our family, both Kas and I have birthdays and then there is Valentine's day too. We have continued onward with our whole food, plant-based way of life and found some new recipes and methods for getting enough calories that still taste good.  Lentil Stuffed Peppers and Salad Whole Wheat Flatbread with Loads of Veggies on Top - Kas requested this for her birthday meal During dinner time Hinckley has started being much more vocal, but not in a good way! However, we have found that for some reason he gets a really big kick out of us drinking our water from our water bottles. Check it out -  Last week we went out and got some new running shoes for Kassie as her birthday gift. Other goods included a Whirley Pop (popcorn!!) and a calendar. We discovered a neat place called the Oxley Nature Center up near the Zoo in North Tulsa. We enjoyed the beautiful 60 ish degree weather and sunshine and strolled around nature. It sure felt good

February Birthdays: Round 1

It was a cold week. Nevertheless, I did not want to sit around huddled up at home. I dressed Hinckley appropriately for the cold weather: his regular clothes under a snap-up sleeper with his coat, a hat, mittens, and booties. His mittens only lasted for about one minute before he took them off. So aside from his hands, I don't think he felt the least bit cold as we ran our errands. "Can't put my arms down!" It was Greg's birthday on Saturday! He doesn't like parties, so I tried to make it special in other ways. I realized that when it comes to holidays and celebrations most traditions center around food. Food that we can't eat because of our WFPB diet . With that in mind, we did break our diet a little: Greg wanted eclair cake, as is his birthday tradition and there is no way to do that without dairy and sugar.  Eclair Cake = The Best Birthday Dish  The eclair cake felt great for the few moments it was in our mouth, but we paid the price in

Welcome February

We enjoyed a temple excursion to Oklahoma City last week. It was a spiritual feast to attend the temple, and then spend some quality time with Hinckley while Kas enjoyed a session.  This week we decided to take back the TV, DVD player, and HDMI cable we got only a few weeks ago - so the historic decision to actually get a bigger screen to watch stuff on has now been made null. After thinking about certain kitchenware that needs to be replaced and a whole host of other items that better fit under "needs" and not "wants" we thought it was a bit ludicrous to purchase a nice new TV which then required us to buy more junk. It was nothing short of a miracle that we were able to return all those items since we didn't have a receipt for the TV and the other items couldn't be returned after 15 days. But we were still able to return them. So there are bitter sweet feelings about that. Looks like we will keep watching  Downton  and  Sherlock  and the other host
